Fresh and crunchy cucumber slices topped with a creamy chicken salad. The chicken salad has an appetizing garlic kick and mozzarella cheese inside and is topped to add a creamy flavor. These cucumber chicken salad bites would be the perfect dish to make or bring to your next potluck or dinner party.
Ingredients:
- chicken, canned
- english cucumber
- mozzarella cheese
- garlic cloves
- mayonaise
- salt & pepper
How to assemble Cucumber Chicken Salad Bites:
Wash and dry cucumber and slice even slices about 18-20. Then using a melon baller or metal teaspoon scoop out middle of cucumber slices. Lay onto paper towel scooped side down for any juice to drain.
In a bowl mix the chicken salad, combine drained canned chicken and Β½ cup of mayo, and ΒΌ cup of mozzarella cheese. Mix and season with salt and pepper to taste.
Place cucumber slices on a plate or serving dish and using a paper towel dab out excess juice. Then top with a teaspoon of chicken salad and top with grated mozzarella cheese.
Garnish with parsley is optional. Best enjoyed day of may be refrigerated overnight.
How to make cucumbers not watery?
I do a 2 step process to make sure extra moisture won't gather in the cucumber cups. First, let the cucumber slices lay scooped side down on a paper towel while you prepare the chicken salad. And the second step is right before filling with chicken salad dab the inside with a paper towel for any remaining cucumber juice. By doing these 2 steps it will insure your cucumber bites stay fresh longer and can even be enjoyed the next day.
Making the cucumber bites ahead of time?
Make the chicken salad according to the instructions and store it in an airtight container until ready to assemble. Prepare cucumber and store in an airtight container lined with a paper towel or slice when ready to assemble and serve.
