Instructions
Wash and dry cucumber and slice even slices about 18-20. Then using a melon baller or metal teaspoon scoop out middle of cucumber slices. Lay onto paper towel scooped side down for any juice to drain.
In a bowl mix the chicken salad, combine drained canned chicken and ½ cup mayo and ¼ cup of mozzarella cheese. Mix and season with salt and pepper to taste.
Place cucumber slices on a plate or serving dish and using a paper towel dab out excess juice. Then top with a teaspoon of chicken salad and top with grated mozzarella cheese.
Garnish with parsley is optional. Best enjoyed day of may be refrigerated over night.
