Looking for a high-protein quick snack? This Cottage cheese wrap has a filling of garlicky cottage cheese and is wrapped with a thin lavash. It is customizable, quick, and easy to make.

This lavash bread recipe is similar to the meals we would eat that my Ukrainian mother would make us. A lot of recipes had farmer cheese in them, today in the US it is hard to find farmer cheese so cottage cheese makes the perfect substitute. It is cream while still being crumbly and high in protein.

Substitutions and Variations
- Cottage cheese- Can be substituted with Farmer cheese if you have access but then add 1-2 tablespoon of sour cream so that it will cream together.
- Herbs- Feel free to add other herbs. Another herb that would work well is dill. Chop up and add in with green onions.
Feel free to customize the ingredients to your preference. Some other great additions would be chicken, spinach, and or parmesan cheese.
Instead of baking the cottage cheese wrap in the oven, you can also fry it on a skillet. Just make sure to coat both sides of the lavash in the egg wash.
Equipment Recommendation
- Baking sheet- Used to lay the lavash on and bake in the oven.
- Pastry Brush- This will help easily brush egg wash onto the lavash.
- Mixing bowl- To mix all the ingredients for the filling together.
Instructions
Step 1: Mix the filling: Preheat oven to 350F. Then add 2 cups (16oz) of cottage cheese, 1 bunch of green onions chopped, and 2-3 garlic cloves. Feel free to add some salt and pepper or other seasonings to your liking.
Step 2: Spread filling: Lay your lavash on the table and spread the mixed filling getting to the edge and making sure it is evenly spread. Then roll up and flatten with each time I did 3 folds.
Step 3: Baking the Lavash wrap: Cut the wrapped lavash Make an egg wash by beating 1 egg until frothy. Then with a brush, brush egg wash over each piece. Place on a parchment-lined baking sheet and into a preheated oven for 15 minutes or until golden brown.
Hint: In the last 5 minutes you can set the oven to broil to get a crisp and golden crust.
Storage
Store in an airtight container in the fridge for 2 days. It is best enjoyed fresh but to reheat preheat a skillet and crisp up again.
Top tip
If your cottage cheese has too much liquid drain it in a strainer. This will keep the lavash crisp and not become soggy.
