This Chicken Pesto Grilled Cheese recipe was born one day when a coworker and I were talking about what to make for dinner. One ingredient led to another and we came up with this chicken pesto grilled cheese. This grilled cheese sandwich is next level to a traditional grilled cheese. So quick to make and the flavor is heavenly. Makes the perfect side for a bowl of soup or as a quick meal.
What ingredients you need:
- bread
- chicken
- pesto
- mozzarella cheese
- butter, for frying
- marinara sauce, for dipping (opt.)
How to assemble your chicken pesto grilled cheese:
1. Slice your bread into 8 slices, and lay flat facing each other.
2. Spread pesto on all bread slices.
3. Place mozzarella cheese on one slice and the other slice with shredded chicken. Close your sandwich and press firmly on top.
4. Heat a nonstick skillet to medium heat, Place a slice of butter in the middle of the pan and place the sandwich onto the butter. Top the sandwich with a weight I use a marble coaster you can also use the back of your spatula to press down firmly on top of your sandwich. Cook on each side for about 5 minutes or until a crispy golden color.
5. When flipping the sandwich add another thin slice of butter and place the sandwich on the melted butter. The butter will make a delicious crispy sandwich.
Can I omit the butter for a healthier option? No, I know the butter seems like extra calories but without it, you won't be able to achieve the beautiful and delicious crisp golden brown crust.

I enjoy marinara sauce the most with this grilled cheese recipe, but if you would like to try something else a balsamic reduction sauce would be quite flavorful as well.Can I use leftover chicken?
YES! This would be a perfect opportunity to use up leftover chicken. Just shred it will 2 forks and use the same way as the canned chicken.What kind of bread can I use?
