Ingredients:
- Calrose Rice/ Short grain
- water
- seasoned rice vinegar
See the recipe card for quantities.
Instructions:
Start by washing your rice, in a bowl add water and clean your rice until the water is clear about 2-3 times. I also like to use a strainer under the faucet and cleanse the rice with my hand while the water washes away the starch.
Pour the clean rice into your instant pot along with 1 ½ cups of water. Turn your instant pot on to pressure cook on high for 5 minutes. I do not recommend using the rice option on your instant pot in my experience the rice comes out overcooked and mushy.
Once the pressure cooker has finished cooking let the pressure self-release, If you need the rice quicker let it self-release for at least 5 minutes and then you can manually release the pressure.
Gently mix in 2 tablespoon of seasoned rice vinegar to the cooked sushi rice while the rice is still hot. Now your Sushi rice is ready to make your sushi rolls.
Substitutions:
If you would like to make your own seasoned rice vinegar you can do so by bringing to a slight simmer:
- 2 tablespoon of unseasoned rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
Once the sugar and salt have dissolved your sushi rice vinegar is now ready make sure not to bring it to a boil.
Equipment
You will need an instant pot to make this sushi rice recipe simple. If you don't have on you can use a pot and do it on the stove top.
Storage
Cooked and seasoned sushi rice is best used right away if you want to make the rice ahead of time hold off on seasoning it with the rice vinegar until ready to serve. Unseasoned sushi rice can be kept in the fridge for 3-5 days in an airtight container. And frozen for uptown 6 months.
