Succulent chicken breast stuffed with juicy chunks of tomatoes, aromatic basil, and savory garlic caprese. It's like a bruschetta stuffed into a chicken breast.
During the summer season, when tomatoes are at their freshest and juiciest, Caprese is the ultimate way to savor their flavor. I discovered this delightful meal while preparing bruschetta for myself and wanted to make it a filling meal.
Ingredients
- Chicken breast
- Tomatoes- if you have a backyard garden this recipe will be a perfect way to use them.
- Basil
- Mozzarella cheese- fresh mozzarella works the best in the recipe.
- Balsamic glaze
- Garlic
- Olive oil
- salt and pepper

Instructions
Clean and pat dry the chicken. Make a slit down the center of the breast as pictured. Then season with salt and pepper making sure to get into the pocket. Set chicken aside and let it adsorb the seasoning while you prepare the Caprese filling.
To make the caprese dice 1lb of tomatoes and drain any extra juices. Chop up the 2 springs of basil finely and add in minced 4 garlic cloves. Mix together oil and 2 teaspoon of balsamic glaze.
Preheat oven to 375F. Place chicken in a baking dish and stuff it with the Caprese. Drizzle with extra balsamic glaze and top with fresh mozzarella cheese.
Place into a preheated oven and bake uncovered for 35-45 minutes or until internal temperature reaches 165F.
Once the chicken is cooked drizzle with extra balsamic glaze and top with extra caprese. Enjoy this Caprese Chicken with your favorite pasta.

- Baking dish - a great baking dish goes from oven to table.
- Sharp knife- when dicing tomatoes you want to make sure you use a sharp knife. This will help you get perfect slices and diced tomatoes. Or use a knife sharpener on your current knife.
Storage
Store the leftovers in an airtight container for 3 to 4 days. Reheat in a skillet on medium heat.
