When you bite into a Coconut Macaroon inside is a fluffy texture that is light and flavorful and dipped into irresistible chocolate to complete the cookie. I got this recipe from a small recipe card at Winco Foods by the bulk food section. Not sure what interested me to take the recipe card but I'm glad I did I have been making this recipe for 9 years now and with a few small changes it has become a favorite in our family.
What ingredients you will need to make these coconut macaroon cookies:
-butter
-cream cheese
-sugar
-egg yolk
-almond extract
-orange zest
-flour
-baking powder
-salt
-coconut flakes
-chocolate chips
Tools you will need:
-baking sheet
-parchment paper
Coconut Macaroon Instructions:
Preheat oven to 350Β°F.
In a bowl of an electric mixer, beat together β
cup butter, 3 oz. cream cheese, and ΒΎ cup sugar until well blended.
Add in egg yolk, 2 teaspoon almond extract, orange zest beat well.
In a separate bowl or in the measuring cup stir together 1ΒΌ cups flour, 2 teaspoon baking powder, and ΒΌ teaspoon salt, then gradually add to butter mixture beat until well blended.
At low-speed stir in 3 cups of coconut flakes.
Using a cookie scoop, scoop dough into a bowl with the remaining 2 cups of coconut flakes. Coat all sides of the cookie with coconut flakes, then place on the baking sheet. Cookies should be about 1Β½ inches.
Bake in preheated oven for 15 minutes or until lightly brown. Remove from oven and let cookies cool for 2-3 minutes then transfer to a cookie sheet to cool completely.
Using a double boil method melt chocolate. Then dip bottoms of cooled cookies into the chocolate and place on parchment paper for the chocolate to harden.
Enjoy with your favorite cup of coffee or tea!
Recipe Tips and substitutions:
-If you don't have a fresh orange to zest you can substitute it with 2 teaspoon of orange juice.
-When forming the cookie balls roll in between the palm of your hands to form a perfect circle, then top with coconut flakes and roll them into the dough.
-Instead of dipping the bottoms into chocolate you can drizzle the tops with chocolate, or dip into chocolate and drizzle, or omit the chocolate altogether.
