COCONUT MACAROON COOKIES

Ingredients
  

  • cup unsalted butter softened
  • 3 oz cream cheese softened
  • ¾ cup granulated white sugar
  • 1 egg yolk
  • 2 teaspoon almond extract
  • 1 zest of a medium orange
  • cups all-purpose flour
  • 2 teaspoon baking powder
  • ¼ teaspoon sea salt
  • 5 cups coconut flakes 3 for cookie 2 for coating
  • 8 oz chocolate chips for melting (opt.)

Instructions
 

  • Preheat oven to 350°F.
  • In a bowl of an electric mixer, beat together ⅓ cup butter, 3 oz. cream cheese, and ¾ cup sugar until well blended.
  • Add in egg yolk, 2 teaspoon almond extract, orange zest beat well.
  • In a separate bowl or in the measuring cup stir together 1¼ cups flour, 2 teaspoon baking powder, and ¼ teaspoon salt, then gradually add to butter mixture beat until well blended.
  • At low-speed stir in 3 cups of coconut flakes.
  • Using a cookie scoop, scoop dough into a bowl with the remaining 2 cups of coconut flakes. Coat all sides of the cookie with coconut flakes, then place on the baking sheet. Cookies should be about 1½ inches.
  • Bake in preheated oven for 15 minutes or until lightly brown. Remove from oven and let cookies cool for 2-3 minutes then transfer to a cookie sheet to cool completely.
  • Using a double boil method melt chocolate. Then dip bottoms of cooled cookies into the chocolate and place on parchment paper for the chocolate to harden.
  • Enjoy with your favorite cup of coffee or tea!

Notes

Tips and substitution:
-If you don't have a fresh orange to zest you can substitute it with 2 teaspoon of orange juice.
-When forming the cookie balls roll in between the palm of your hands to form a perfect circle, then top with coconut flakes and roll them into the dough.
-Instead of dipping the bottoms into chocolate you can drizzle the tops with chocolate, or dip into chocolate and drizzle, or omit the chocolate altogether.
