This Cast Iron Flank Steak is marinated with a Mexican-inspired marinade I came up with one evening as I was making dinner. Our family loves Mexican food, but the premixed taco seasoning just wasn't cutting it anymore. So I decided to make my own and adjust the seasonings to my liking and this is what I came up with. This cast iron flank steak can be served in tacos, burritos, bowls, or oven-roasted like I decided to.
Ingredients for flank steak marinate:
- Flank Steak
- Paprika
- Salt
- Coriander
- Garlic Cloves
- Onion Powder
- Cumin
- Cilantro
- Green Chilies
- Lime
- Avocado oil for frying
Avocado salsa Ingredients:
Avocados
purple onion
tomatoes
garlic cloves
cilantro bunch
juice of lime
avocado oil as dressing
Marinating the flank steak:
In a blender, blend cilantro, chilies, garlic, and all the seasonings for the marinade. After your marinate is a smooth consistency coat the steak, cover, and let marinate for about 20 minutes while you prepare the avocado salsa
Making the avocado salsa:
Dice avocado, onion, and tomatoes. Chop cilantro and mince garlic. Mix with avocado oil until all ingredients are incorporated
Cooking the steak in a cast iron skillet:
Heat a cast-iron skillet on high pour in avocado oil and place your steak into the skillet and char on both sides. Lower the heat to medium and finish cooking the steak to your desire. For medium (how we like it) about 5-7 minutes per side. Then let your steak rest for about 10 minutes before slicing it.
Look at all that succulent juice
Take the steak off heat and let rest for 10 minutes and slice. Top with avocado salsa and Enjoy!
