These are my favorite crepes the crepes aren't greasy and you don't need a blender for the batter. The poppyseed addition makes the crepes look so appealing and festive. I just recently started to add poppyseed into the batter after a friend recommended it and I am impressed the tiny poppyseed speckles give the traditional crepes an appealing look and add a hint of flavor to the batter. Serve these as a pleasant surprise this holiday season and you won't regret it.
Crepes are perfect for dinner parties and holiday get-togethers since you can make them ahead of time. To make it even simpler for you as it is a process, split the task into 2 days one day make the crepes and next day fill and roll them. I hope you enjoy these as much as our family does, no holiday or event goes without these crepes.

Making the poppyseed crepes:
In electric mixer, mix on med-high speed mix eggs and sugar until frothy. Then add in the rest of the wet ingredients.Turn down the speed to low and add flour, baking powder, and poppy seeds in a spoon full at a time. Depending on which flour you use you may need to add a few more tablespoons of flour to reach the desired consistency.
Using an electric crepe maker or a nonstick skillet. Pour 2-3 tablespoons into skillet or dip crepe maker into batter and let cook until the bottom is lightly golden. Using a thin-edged spatula flip and let the other side crisp up ever so slightly. This is what my set up looks like. It helps with clean up if you place plastic wrap on the countertop.
Repeat with the remaining batter until finished. DON'T stack crepes on top of each other, alternate where you place to avoid them sticking to each other.
Filling for crepes:
Prepare cheese filling. In an electric mixer, mix cheese (if using cottage cheese rinse with cold water in a colander and let drain) cream cheese, sugar, and whipping cream. Mix until smooth.
Fill crepes with cheese filling:
Prepare a casserole dish or baking dish by placing a few slices of butter on the bottom. Fill crepes by placing about 1 tablespoon of cheese filling and spread on the darker side or the side that doesn't look as good. Fold in sides about 1 inch on each side, and roll. Place into baking dish so the rolled-up end is on bottom. Repeat with the remaining crepes.
Preheat oven to 350F. Make sauce by mixing sugar with whipping cream and pour over rolled crepes. Cover baking dish with foil and bake in the oven for 30-40 minutes.
