PESTO CHICKEN CASSEROLE

Chicken marinated with garlicky pesto and baked in the oven until cheese melts into a crispy topping. This recipe is sure to become a family favorite that you will make again and again.

Ingredients
  

  • 3 lbs chicken thighs, tenderloins, or breast
  • 6 oz pesto
  • 8 oz cream cheese softened
  • 1 lb mozzarella cheese shredded

Instructions
 

  • Preheat the oven to 350F. First off clean the chicken and pat it dry. Then place into an oven-safe baking dish.
  • In a bowl mix 6oz of pesto with 8oz cream cheese until smooth and well combined
  • Spread pesto/cream cheese over chicken and top with shredded mozzarella cheese.
  • Cover with foil and place the baking dish with chicken into the oven and bake at 350° for 30 minutes or until the chicken reaches 165°F. Remove foil and broil for an additional 3-5 minutes until cheese is golden crisp.
  • Enjoy with your favorite side dish.
