  • 1 large pot
  • 1 Potato masher or electric hand mixer
  • 1 Saucepan
  • 1 whisk

Ingredients
  

  • 8-10 russet potatoes
  • ½ cup unsalted butter
  • 5.2 oz garlic and herb boursin cheese
  • ½ cup whole milk
  • salt to taste

Instructions
 

  • Peel the russet potatoes then cut into cubes in a large pot and cover them with cold water. Bring the water to a boil and cook the potatoes until they are fork-tender, usually about 15-20 minutes.

  • In a saucepan melt ½ cup of butter in the saucepan then add ½ cup of milk bring to a simmer but do not boil.

  • Drain the cooked potatoes and return them to the pot then pour the milk and butter over the potatoes. Place Boursin cheese into the pot as well. Using a potato masher or an electric hand mixer, mash the potatoes to your desired consistency or mix until well combined.

  • Transfer the cheesy mashed potatoes to a serving dish.
    Garnish with freshly chopped parsley for a burst of color and flavor.
