JELLO FRUIT SALAD

Julie Chelombitko
Fruit salad with jello and mixed together with whipped topping. A little twist of adding in grated mozzarella cheese makes for an unexpected surprise.

Ingredients

  • 1 lb strawberries
  • 30 oz mandarines canned
  • 30 oz peaches canned
  • 3.4 oz red jello
  • 3.4 oz orange jello
  • 8 oz cool whip
  • ½ cup Mozzerella cheese grated on large holes

Instructions

  • Make jello according to the package instructions but only using ¾ cup cold water and ¾ cup hot water. Let set in fridge either overnight or until firm.
  • Defrost cool whip in the fridge.
  • Slice strawberries into small pieces to your desired size. And grate mozzarella cheese, you can grate on either the large holes or small either one will work I prefer the large holes.
  • Drain canned peaches and mandarines and cut them down into smaller pieces.
  • Once the jello is firm cut into cubes about ½ inch pieces.
  • In a large bowl mix all ingredients together with defrosted cool whip.
  • This fruit salad is best enjoyed the day it is mixed but leftovers will still be good a day later.
  • For a make ahead option dice all the fruit, have the cheese grated separately, and cool whip separate. When ready to serve add everything into the bowl and mix.

Notes

Recipe tips:

Defrost the Cool Whip- The easiest way is to place it into the fridge from the freezer when you make the jello so that by the time the jello sets the Cool Whip will have defrosted.
For a stunning presentation, consider using a clear glass bowl or individual serving cups to showcase the vibrant layers of Jello and the colorful fruits. It's as pleasing to the eyes as it is to the palate.

Recipe Substitutions:

  • Fruit- Feel free to add more fruit, blueberries would be a great addition as well.
  • Mozzarella cheese- If you don't like the idea of cheese in the fruit salad feel free to leave it out. Although it is the special ingredient in this recipe.
  • Jello- Feel free to substitute with any jello color or flavor to match your event or for a unique twist.
