Make jello according to the package instructions but only using ¾ cup cold water and ¾ cup hot water. Let set in fridge either overnight or until firm.
Defrost cool whip in the fridge.
Slice strawberries into small pieces to your desired size. And grate mozzarella cheese, you can grate on either the large holes or small either one will work I prefer the large holes.
Drain canned peaches and mandarines and cut them down into smaller pieces.
Once the jello is firm cut into cubes about ½ inch pieces.
In a large bowl mix all ingredients together with defrosted cool whip.
This fruit salad is best enjoyed the day it is mixed but leftovers will still be good a day later.
For a make ahead option dice all the fruit, have the cheese grated separately, and cool whip separate. When ready to serve add everything into the bowl and mix.
