To prepare clay pots make sure they are cleaned and if they are new and need to be seasoned follow the steps on the package for seasoning the clay pots. Assemble ingredients in layers inside the pots starting on the bottom with the steak bites about 3-4 pieces on the bottom then a tablespoon of the caramelized carrots and onions, the seasoned potatoes, and top off with one more tablespoon of the caramelized onion and carrots. Add bone broth about ¼ cup in each pot you can put less but at minimum, it needs at least 1 tablespoon of liquid.

  • Bake Beef stew- Place filled pots into the preheated oven. It is recommended to either place the pots on a baking sheet or add a baking sheet under them as the stew cooks in the oven it can sometimes leak liquid. Bake for up to 2 hours or until the beef is tender and the potatoes are cooked.

Notes

Recipe tips:

    • Low and Slow: The gradual increase in temperature and the extended cooking time will allow the meat to become tender and absorb the flavors of other ingredients.
    • Keep the lid on: This traps the steam and moisture, helping to maintain a consistent, moist environment within the pot.

Cooking Variations:

Dutch oven: To make this recipe in a dutch oven follow the same steps but in the dutch oven you may need to add a bit more broth. You should see broth rising up on the sides of the pot.
Slow cooker: On low for 4 hours or high for 8 hours. Follow the same steps.
Instant pot: Add 4 cups of bone broth and set to pressure cook on high for 40 minutes.
