Preheat oven to 400°
While preparing the apple pie filling make sure you have the puff pastry sheets defrosted. If you haven't taken them out of the freezer now is the time to take them out and separate the 2 pieces so they will defrost quicker.
To make the apple pie filling start by peeling and coring apples. Then, slice the apples in half and then into ½-inch slices. Next, Coat the apple slices evenly with ½ cup brown sugar, 1 teaspoon vanilla extract, and 1 teaspoon cinnamon.
In a pan on medium heat melt 4 tablespoon of butter and add the coated apples with sugar and spice. Don't overcrowd the pan with the apples. You may need to fry the apples in 2 batches. Set aside to cool as you prepare the dough.
To prepare the easy apple pie with puff pastry start by unfolding the puff pastry dough and lightly sprinkle both sheets with flour. Then, using a rolling pin gently roll the dough out evenly without making it too thin otherwise the puff pastry won't rise as well and you won't have the airy layers.
Cut the puff pastry dough into 5 sections vertically and 2 sections across. On half of the dough strips add 1-2 tablespoon of apple pie filling. After your puff pastry has the filling on it you will need to seal the apple hand pies by lightly wetting your finger in water and gliding on the edges of the side that has the filling.
To close your hand pies take the second piece of dough lightly and stretch it just enough to meet the edges while covering the apple pie filling. Next to make sure no apple pie filling leaks out press with your finger along the edge of the pastry. Then using a fork press along the edge to seal. This gives a cute design but also so the dough pieces seal well.
To make slits on top of your hand pies use a sharp knife and cut 2 to 3 slits on top. This will release air so that your pastry won't burst.
Sprinkle turbinado sugar on top of the egg-washed apple pie puff pastry. The sugar will create crystalized sugar once done baking.
Place the hand pies into the preheated oven at 400F and bake for 20 minutes or until golden brown.
