CHICKEN PESTO GRILLED CHEESE

This chicken pesto grilled cheese is a upgrade from your traditional grilled cheese sandwhich. Quick to make yet full of flavor making it the perfect side to serve with a bowl of soup or a quick meal.

- 8 slices bread
- 4 oz canned chicken
- 4 tablespoon pesto
- 8 oz mozorella cheese shredded
- butter for frying
- 1 cup marinara sauce for dipping (opt.)
Slice your bread into 8 slices, and lay flat facing each other.
Spread pesto on both bread slices
Place mozzarella cheese on one slice and the other slice with shredded chicken. Close your sandwich and press firmly on top.
Heat a nonstick skillet to medium heat, Place a slice of butter in the middle of the pan and place the sandwhich onto the butter. Top the sandwhich with a weight I use a marble coaster you can also use the back of your spatula to press down firmly on top of your sandwhich. Cook on each side for about 5 minutes or until a crispy golden color.
When flipping the sandwich add another thin slice of butter and place the sandwhich on the melted butter. The butter will make a delicious crispy sandwich.
Enjoy with marinara sauce! Best enjoyed fresh.
