Ingredients
  

  • 9 baguette slices sliced at an angle
  • 5 large eggs
  • 2 large avocado
  • ΒΌ cup mozzarella cheese shredded
  • 1 teaspoon olive oil
  • 1 teaspoon lemon juice
  • salt & pepper to taste
  • green onion for garnish

Instructions
 

  • Slice bread at an angle and toast to a light crisp
  • Mash avocado, add oil, lemon, salt and pepper
  • In a non-stick skillet fry eggs and season with salt and pepper. Wait until the eggs are white under and then slowly mix to create large scrambled chunks. I prefer to slightly undercook the eggs so the yolks are still jam-like, but feel free to cook to your preference.
  • Sprinkle cheese over the cooked eggs and let melt while you spread avocado onto the toast.
  • Spread mashed avocado onto toast, top with egg, and sprinkle with green onions
  • Enjoy!
