Slice bread at an angle and toast to a light crisp
Mash avocado, add oil, lemon, salt and pepper
In a non-stick skillet fry eggs and season with salt and pepper. Wait until the eggs are white under and then slowly mix to create large scrambled chunks. I prefer to slightly undercook the eggs so the yolks are still jam-like, but feel free to cook to your preference.
Sprinkle cheese over the cooked eggs and let melt while you spread avocado onto the toast.
