I love making breakfast for my family every Saturday morning when we aren't in a rush to go to school or work everyone can gather at the table and eat a fresh hot breakfast. These breakfast crostinis are the perfect breakfast to make to start your weekend off right. The creamy mashed avocado spread and topped with scrambled eggs and garnished with melted cheese makes a perfect breakfast crostini. Super simple to make and so filling. This recipe can easily be doubled or tripled and be a beautiful addition to your next brunch.

How to assemble the breakfast crostini's
Slice the baguette at an angle and toast to a light crisp.
Mash avocado, add oil, lemon, salt, and pepper mix until creamy and smooth.
In a non-stick skillet fry eggs and season with salt and pepper. Wait until the eggs are white under and then slowly mix to create large scrambled chunks. I prefer to slightly undercook the eggs so the yolks are still jam-like, but feel free to cook to your preference.
After the eggs are done turn off the heat and sprinkle cheese over the cooked eggs and let melt while you spread avocado onto the toast.
Spread mashed avocado onto toast, top with egg, and sprinkle with green onions.
